Crockpot Beef Stew with Root Veggies
Ingredients:
1 lb grass-fed beef stew meat
4 medium carrots
3 stalks celery
2 medium onions
4 fingerling potatoes
1 Eden Organics 14oz jar Crushed Tomatoes
Cumin, pepper, cilantro and red pepper to taste
Directions:
- Chop all vegetables into small, 1/2-1"-sized pieces. Peel potatoes if desired- not necesary
- Add all ingredients (minus cilantro) into the crockpot.
- Mix ingredients together, and cook in crockpot on Low for 4-6 hours
- Add chopped cilantro to top your stew once served, if desired.
That looks really tasty, looks a lot like what my Mom used to make for dinner when I was a kid, though I think she used V8 for soup broth. Also I initially read "Crockpot" as "Crackpot" haha.
