Spicy Chorizo and Veggie Breakfast Casserole
1 lb chorizo sausage
6-8 eggs
1 medium onion, finely chopped
2 bell peppers, finely chopped
1 sweet potato, cut into 1/2" pieces
1 jalepeno, finely chopped
Optional:
salt
pepper
Frank's Hot Sauce
cilantro
- Pre-heat the oven to 375
- In a frying pan, brown the sausage
- Crack eggs into a 9x13 baking dish and wisk
- Add sausage, chopped veggies & optional ingredients
- Stick dish in oven and cook for 25-30 minutes, until cooked throughout.
- Serve with an extra shake of hot sauce and some chopped cilantro, if desired.
